We are proud to showcase three stunning coffees from two families and Madcap partners out of El Cedral, Santa Barbara, Honduras. Juan Angel and his family delight us year after year with complex and flavorful coffee from his 8-acre plot in El Cedral. Since 2014 we have been Juan’s sole buyer, witnessing his family grow up and assist in the picking and processing of his pacas, catimor, and in recent years, geisha varieties. In this year’s pacas lot, we’re enjoying notes of green apple and juicy orange, balanced with syrupy caramel. In 2022, Juan’s son Irvin Izaguirre was given Juan’s prized coffee farm, La Montaña. At 1850 meters above sea level, La Montaña sits high above neighboring farms. This elevation makes for strong pacas coffee trees, in turn producing truly stunning coffee full of jammy red berry tasting notes. Due to the farms uniquely high altitude, the coffee must be transported in small lots by mule. Nelson Moreno comes from a long line of coffee farmers and cares for several lots spanning almost 60 acres in Santa Barbara. After its harvested and depulped, this pacas variety is sealed in barrels for 80 hours before being left in open-air fermentation tanks for 12 hours. The coffee is then washed and dried on raised beds for 12-13 days. Nelson Moreno’s is the only anaerobically processed coffee on our menu, and his great attention to detail translates to a silky final cup with unique tasting notes like starfruit and white peony.
