A FULLY BALANCED CUP WITH A RARE PROCESSING METHOD FROM BRAZIL
Sitio Vista Linda comes to us from Castelo, a municipality in the southwest of the state of Espírito Santo, Brazil. We purchased this year’s lot from Dércio Lachini, and although this is our first year working with Dércio, it is the third year we’ve partnered with FAF, which mills and exports the coffee. Part of the third generation of coffee producers in his family, Dércio has been farming coffee his entire life on their family property Córrego da Cozinha. Córrego da Cozinha produces mainly Catuai 785, a variety that has adapted very well to the region. Sitio Vista Linda grows around 900 to 1100 MASL and is processed with the peel off of the cherry, drying with the rest of the fruit left intact. This pulped natural processing method exhibits characteristics of both washed and natural processes. The method accentuates the sweetness and acidity present in the coffee, ending in a truly special final cup.
