The Coffees We Return To

Last week we had the opportunity to work alongside our partner Breville, captured by Ringo Fire to showcase a few of Madcap’s always-on coffees including Eureka, Bolt, and Placebo.
Throughout the day, Trevor Corlett, Founder of Madcap Coffee, walked through building espresso at home using Eureka, our signature espresso blend designed to taste just as good on its own as it does in milk. We also spent time preparing our current signature beverage, Sherbet & Soda, inspired by coffee producer Juan Angel and built around citrus, raspberry, vanilla, and cascara.
Signature drink Sherbet & Soda, available in all Madcap cafes and easy enough to make on Breville home espresso equipment, including the Barista Touch Impress and InFizz Fusion.
One of the things Trevor touched on throughout filming was how Eureka came to exist in the first place. Specialty coffee changes constantly with seasonality, harvests, and fresh crop arrivals, but the challenge became figuring out how to create a coffee wholesale partners and home customers could return to every day while still allowing the blend to evolve alongside the coffees arriving at the roastery.
While the components shift throughout the year, the goal of Eureka has remained the same for nearly two decades: balanced sweetness, structure, approachable fruit, and an espresso that feels equally at home as a straight shot, in a latte, or as part of someone’s daily routine.
Current iterations of Eureka combine coffees from Central and South America with selections from East Africa to create a profile that is syrupy, citrus-forward, chocolatey, and clean. Built for versatility, but still layered and expressive.
Alongside Eureka, we featured Bolt, our approachable house blend designed for everyday brewing, and Placebo, our sugar cane decaffeinated coffee developed to offer sweetness and structure without compromise.
Bolt was created to be dependable and comforting. Low acidity, caramelized sugar sweetness, and full-bodied no matter the brew method. Placebo continues to be one of our favorite reminders that decaf coffee can still feel intentional, complex, and complete.
